 The coffee is grown by smallholders in Gayo Highlands, where farmers are supported by cooperatives to produce Organic and Fairtrade Organic (FTO) coffees.

Indonesia Sumatra's Gayo Highlands have small farms averaging 1 hectare, where coffee is shade grown under trees like lamtoro. Farmers also work as laborers at nearby tea plantations.

Sumatran coffee is uniquely processed using the wet-hulled method due to high humidity, often hand-picked and pulped before being fermented and sun-dried for easy removal of the parchment.

At this stage, the moisture level is 30-40%. Farmers hand over their parchment to a collector who will either wet hull or sell it to someone else who will. Wet hulling is a crucial step as it requires a similar investment to traditional dry hulling but is more powerful and faster. Most farmers do not have their own hullers.

After hulling, the coffee seed is dried to reduce size and moisture to 14-15% before being sorted and prepared for shipment by exporters based in Medan.

Very nice

Received as a Christmas gift. Brewed a pot of Indonesia Sumatra to serve with dessert. It was very nice and full bodied.
