Introducing Brazil's Vitor Marcelo, a top coffee producer who works closely with the Barbosa Family. As a key decision-maker, he puts his focus on managing their Sucuri farm and collaborating with Danilo. His expertise also shines in experimental processing, with his natural coffee winning the 2021 Brazilian Cup of Excellence. Meet Topazio, a cross between Mundo Novo and Yellow Catui, named after the bright yellow gemstone. Despite its short stature, it produces vibrant yellow fruit (hence the name, duh). However, the seemingly simple processing method requires precision and attention to keep off-flavors at bay. After being hand-picked and carefully sorted, the cherries are put into oxygen-free barrels for a 96-hour Anaerobic fermentation. This specialized environment stifles the growth of bacteria, resulting in a unique and delightful booziness, a burst of fruity flavors, and a playful finish
